Meet Rebecca

Becca BioThis is Rebecca Powell, a 22 year old from Las Cruces, New Mexico, where she also attended college to obtain a degree in Biology with an emphasis is Chemistry. During her year of service, Rebecca is working at Cooking Matters, an organization dedicated to decreasing childhood hunger. Cooking Matters accomplishes this by teaching six week combined cooking and nutrition courses to families in need. Rebecca states, “the reason I am participating in these simplicity challenges is because I feel that there are a lot of ‘normal’ and ‘everyday’ conveniences that we, as a culture, tend to overlook.”

Q. “To me, simplicity is…”

A. cutting back on what I think I need so that I may learn the actual necessities of life.

Q. What do you expect to experience during the next few months of “simplicity challenges?”

A. I would like to gain a new perspective on how the people I work with everyday have to live and hope to gain more compassion for their troubles.

Q. How have your ideas of simplicity changed since August?

A. Although my own view of simplicity has not changed over this past year, I have implemented more active changes to my lifestyle.

Q. What has been the most difficult aspect of “simplicity” thus far?

A. The hardest part of the challenges I have faced so far is remembering that I am not supposed to use technology at certain times.  I often forget to check the time and do not realize that I have been on my phone or computer during the time when we are supposed to be abstaining. This is especially true when the community is not together at that time.
